Customizing coffee machines for a cafe takes a much more sophisticated approach than just building a hot-rod. Above all else, your equipment has to make you money by serving coffee that someone’s going to drink. So it has to be safe, reliable, and you need to be able to keep it clean. It has to meet safety standards set forth by UL and NSF, so any custom work has to meet those standards as well.
But as if that weren’t enough - it still has to fit into its surroundings. The right machine might just be the wrong colour, or you may want to enhance it with a finish, material, or styling cue picked up from elsewhere in the cafe. It’s possible you may also want to add a feature your machine never had to begin with - but you want to do it right. This can be a simple or elaborate process, but you’ve come to the right place. The brief for this build was to leverage existing equipment and combine it with new equipment to optimize the lower cafe and commission a new cafe in the upper floor in anticipation of a large increase in output. The original espresso machine was relocated upstairs to a new bar, while the lower bar was modified to accept a larger machine. Extensive consultation was provided for configuration of the new cafe upstairs, taking into account the service volume and workflow needs of the client’s vision for the future.

This build was a restoration and customization of a client’s existing machine to repair damage and incorporate the aesthetic into a workspace remodeling by colour-matching. The steam valves were replaced with lever-style Elektra units for more precise and reliable operation, and the brew temperature was properly tuned by consulting with the founding designer of the machine, Kees Van Der Westen himself.

This machine originally belonged to a cafe in Montreal, and required a full restoration to return it to its former glory. Improper previous repairs were corrected, the boiler electroplated and fully polished, and steam valves replaced with Elektra lever-style units. Brew temperature was also corrected by adjusting the thermosyphon recirculation.

This machine was fully restored and updated from its 2011 version to 2017 current version with firmware upgrade, full steam and coffee boiler insulation, gicleur relocation and replacement, steam valve update and more. Body panels were custom powdercoated in semigloss black to match the customer’s decor.
